Creamy Sausage and Ditalini soup


Ingredients:
1 pound Italian sausage
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes ( drained )
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese plus some for garnish
1 cup ditalini pasta ( small shells are good too )
2 cups fresh spinach, chopped
Salt and pepper to taste, but not much salt as the sausage has salt already
Fresh basil, chopped (for garnish)

Directions:

Heat olive oil in a large pot over medium heat, brown the pound of sausage.

Add the diced onion and minced garlic to the pot, and sauté until the onion becomes translucent.

Add chicken broth and diced tomatoes, bring to a simmer.

Stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is fully melted and the soup becomes creamy.

Add the pasta, salt and pepper and cook for 8-10 minutes

Stir in the spinach until wilted

Remove from heat and serve hot, garnished with fresh basil and more cheese.
