Fried Zucchini with basic batter

So if you have one of those old ladies in your neighborhood that brings everyone zucchini every year about this time, you can stop tossing it in the garbage. Using this simple batter (which can be used for lots of fried things) you can make those zukes into great little snacks.

With this recipe you can batter up about two dozen slices.

Batter:

  • 1 xl egg
  • 1 cup flour
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1-2 tablespoons parmesan cheese

Mix all that together until it’s like pancake batter. I sometimes use a little garlic salt. Adjust thickness with milk and flour if necessary. Some people like to deep fry but you can certainly just pan fry them in a little oil. Deep frying makes them a  bit crispier. Today, just pan fried since i don’t have one of those fancy deep fryers.

Dip them in batter and place them right into the hot pan.

Flip them once browned, and place them on a paper towel once the other side is done cooking. Zucchini is softer than a cucumber so it will cook through pretty quickly.
